Chia Porridge Recipe

Warm breakfast cereal, coffee and a paper might just be the perfect Saturday morning. 1/4 cup chia seeds

1/4 cup flax meal

2 cups coconut milk

2 tsp coconut oil (ghee or grassed butter is optional for savory folk)

1 tsp maple syrup

2 tbsp chopped pecans

1/3 banana sliced

cinnamon

1. In a frying pan on medium heat, place 1 tsp of coconut oil, coconut milk, chia and flax meal. Slowly stir as the seeds with a spatula as they absorb the milk. When the pudding is thick (3 -5 min) pour it into a small serving bowl.

2. Place the pan back on the burner at medium heat, add 1 tsp coconut oil, 1tsp maple syrup, pecans and bananas. Stir gently and brown lightly, do not burn.

3. Pour banana pecan mixture on top of warm cereal and serve with side of warm coconut or almond milk.
